Pumpkin Pie

1 small can pumpkin (14.5oz)
2 eggs
¾ cup SustaBOWL
1 can evaporated milk (12oz)
1 ½ tsp ground cinnamon
¼ tsp ground cloves
½ tsp ground ginger
¼ tsp ground nutmeg
1 prepared pie crust dough (for 9 or 10 inch pie)

Directions:

Preheat oven to 350 degrees.

In mixing bowl, add SustaBowl and spices, mix well. Stir in eggs, then add canned pumpkin and mix well. Stir in milk. Mix, then pour into unbaked pie shell.

Bake uncovered for 1 hour. Cool on rack. Serve with whipped cream.

Spiced Hot Mochas

1 cup strong black coffee
2 TBS cocoa powder
2 TBS SustaBowl
¼ tsp ground cinnamon
1 cup milk
whipping cream

In a small bowl, mix together cocoa, SustaBowl and cinnamon. Heat coffee in saucepan, stir in Cocoa Mixture until dissolved. Add milk. Heat but do not boil.

Pour into cups. Top with whipping cream. Add a stick of cinnamon and a dash of nutmeg.

Makes 2 servings.

Holiday Jam Cookies

½ cup butter- room temperature
1 TBS vanilla
1 egg
½ cup SustaBowl
½ tsp lemon zest
¼ tsp ground nutmeg
1 cup flour
1 cup walnuts, chopped fine
Jam or preserves of your choice

Preheat oven to 350 degrees.

Separate the egg yolk and egg white. Cream the butter, add vanilla and egg yolk. In a separate bowl, mix together the flour and SustaBowl and nutmeg. Add the Flour & SustaBowl mixture into the creamed butter mixture. Mix at medium speed about 1 minute.

Roll dough into 1 ½ inch balls. Dip into egg white and then coat with nuts. Place on cookie sheet and press thumb into center. Fill with your favorite jam. Bake for 10 minutes.

Makes approximately 20 cookies

Cranberry Fruit Salad Mold

1 Apple (chopped ½” cubes)
1 cup Cranberries, (fresh or frozen, chopped finely
1 cup walnut, chopped
1 cup grapes ( cut in halves)
1 orange( cubed- remove seeds)
2 packages unflavored gelatin
2 cups cranberry juice or cranberry pomegranate juice
2/3 cup SustaBowl

In a saucepan add 1 cup of cranberry juice and the SustaBowl, stir with wire whip to dissolve any lumps. Add the gelatin and slowly heat to dissolve gelatin; Add the additional cup of cranberry juice.

In a large bowl add the chopped fruit and nuts, toss together then add the warm liquid. Pour into a fruit mold pan or about a 2 quart bowl. Refrigerate at least 2 hours. Top with whipping cream if desired.

Makes approximately 12 servings.

French Silk Pie

Ingredients:

1 baked Pastry Shell
¾ cup butter (slightly softened)
¾ cup SustaBowl
1 cup semisweet melted chocolate chips
1 tsp vanilla
3 large eggs (whipped)
1 ½ cups Heavy whipping cream

1) Bake 9”pastry shell at 450 degrees for 10 minutes. Set aside to cool.

2) Whip cream in separate bowl at high speed, add 2 teaspoons SustaBowl and set aside.

3) Melt chocolate chips.

In large mixing bowl, whip butter on medium speed for 2 minutes until very creamy. Slowly add SustaBowl, and mix for additional 2 minutes. ( Be sure to scrape sides of bowl) Stir in melted cooled chocolate chips and vanilla. Gradually add eggs. Mix at high speed until light and fluffy.

Add ½ cup whipped cream and continue to mix until uniform. Spoon filling into cooled pastry shell. Spread remaining whipping cream on top of pie. Chill for 30 minutes.

Makes 10 servings.

Asian Peanut Salad Dressing

1 1/3 cups salad oil
¼ cup sesame oil
2TBS cider vinegar
1/3 cup chunky peanut butter ( microwave for 15 seconds to soften)
¼ cup soy sauce
1/3 cup SustaBowl
1TBS fresh grated ginger
1TBS fresh grated garlic

Yield: Makes approximately 2 cups Salad dressing.

DIRECTIONS: Heat peanut butter slightly for easier mixing. Add oils, Vinegar, and SustaBowl. Mix together until uniform. Add garlic and ginger. Mix well.

** For Chinese Chicken Salad, pour about ½ cup of the marinade over cooked shredded or sliced chicken. Toss and refrigerate until ready to serve.

** If dressing is made ahead and refrigerated. Let dressing sit out at room temperature 2 hours before serving to make pouring easier.

Lemon Squares with SustaBowl

Bottom

1 cup all purpose flour
½ cup butter ( softened) 1 stick
¼ cup SustaBOWL

Topping

2 eggs
½ cup SustaBOWL
½ cup Sugar
½ teaspoon baking powder
¼ teaspoon salt
1/3 cup lemon juice

DIRECTIONS:

Heat oven to 350. Mix thoroughly, flour, butter and ¼ cup SustaBowl. Press evenly in bottom of ungreased square pan. 9 x 9x 2 inches. Bake 20 minutes.

In a Kitchen Aid Mixer, beat eggs, add remaining ingredients. Pour over Hot crust. Bake about 25 minutes until no imprint remains when touched lightly in center. Cool. Cut into squares.

Fruit Smoothie

½ cup crushed ice
6 oz Low cal fruit yogurt (any berry flavor)
5-6 Strawberries
1 Banana
2 packets Susta
½ cup Orange juice or milk

Add all ingredients into an electric blender. Mix 1 minute.

Makes 2 – 8oz smoothies

Teriyaki Marinade

1/3 cup Kikkoman Soy Sauce
4 teaspoons Susta Natural Sweetener
1 teaspoon granulated garlic
½ teaspoon fresh grated ginger

Directions:

Add all the above ingredients to a microwave safe bowl or pint jar, microwave at high heat for 40 seconds. Pour marinade over fish, steaks, ribs, or chicken. (NOTE: For chicken, marinade for 1-2 hours before grilling for best results.)

Apple Raisin Bran Muffins

1 cup milk
¼ cup vegetable oil
2 eggs slightly beaten
1 tsp vanilla
1 ½ cups finely chopped apple
2 ½ cups All purpose flour
1 cup SustaBowl
2 ½ tsp Baking Powder
½ tsp Baking Soda
1 tsp cinnamon

1 cup milk
¼ cup vegetable oil
2 eggs slightly beaten
1 tsp vanilla
1 ½ cups finely chopped apple
2 ½ cups All purpose flour
1 cup Sugar
2 ½ tsp Baking Powder
½ tsp Baking Soda
1 tsp cinnamon

Preheat oven to 350 degrees. Spray regular size muffin pans with non-stick vegetable coating spray. Combine cereal, milk, oil, eggs, and vanilla into mixing bowl. Let stand 10 minutes then mix gently with electric mixer. In a separate bowl mix flour, baking soda, baking powder, cinnamon, and SustaBowl together. Gently fold into Cereal batter and mix on medium speed until uniform. Add chopped apples. Spoon batter into oiled muffins tins and bake 15-18 minutes. Makes approximately 18 medium size muffins.

Homemade Brownies

2 sticks butter (softened) or
1 cup SMART BALANCE
4 eggs
1 tsp vanilla
1cup flour (all purpose)
½ cup cocoa (Hersheys type)
1 tsp baking powder
1 cup SustaBOWL
1 cup granulated sugar

(chopped nuts are optional)

Use an electric mixer or Kitchen Aid mixer: Whip butter until fluffy, add eggs, one at a time, then add vanilla and mix on high speed for 5 minutes or until smooth. In a separate bowl, mix together, flour, cocoa, baking powder, SustaBowl and Sugar. Slowly add dry ingredients into mixer and mix for 2 minutes until uniform.

Spead batter into 9 x 9 inch or 9 x 13 inch pan that has been well greased and dusted with cocoa. Batter will be thick and creamy.

Bake at 350 degrees for 30 minutes if using the 9 x 9 inch pan and 25 minutes if using the 9 x 13 inch pan or until toothpick comes out clean.

Yield: 16-20 brownies

Oatmeal Raisin Cookies

Cream together:
½ cup butter or margarine
½ cup brown sugar
1 egg
½ tsp vanilla extract

Mix together in a separate bowl
¾ cup flour
1 cup SustaBowl
¼ tsp salt
1 cup quick oats
½ tsp ground cinnamon
¼ tsp ground allspice
¼ tsp ground ginger

Add the dry mixture above into the butter egg mixture. Mix for 2 minutes.
Add: ½ cup raisins. Mixture about 30 seconds until uniform.
Spoon dough on to cookies sheet.
Bake on cookie sheet 10 minute at 350 degrees.
Makes 2 dozen cookies.
